Calabaza - a new addition!



Tonight I made my regular chicken stir fry, except this time I added some chopped Calabaza. I figured it would be a nice make up dinner for last night's fiasco. I made some Alton Brown steaks last night that my husband loves, with a side of home made mashed potatoes. But as I had mentioned before, his stomach has been problematic for the past couple of months now. Well, soon after he devoured his portion he started feeling sharp pains where his gallbladder was. This actually happens a lot with people who have undergone gallbladder removal. My poor husband, he shook his head while rubbing his side and remarked, "I'm never eating red meat again." I felt so sad for him. Take away a man's red meat...that's just unethical!! So from now on, or at least for a while, he can only eat birds and seafood.

By the way, I looooved the Calabaza in the stir fry. I think next time though, I will add it last to the pot as it cooks rather quickly. AND my husband gulped this down! Not bad for a guy who swore off veggies at one point!
