Well today was quite uneventful, but surprisingly it was one of our better days! Diego had a bout of the runs this morning so I decided to make it a stay-in day. I guess it worked out since the weather outside got a little cold and drizzly. We spent the entire morning sitting on the living room floor playing, while the Disney Channel played an assortment of movies in the background...out of all of them Diego really liked the Aristocats - I laughed when O'malley called her "Duchess." My brothers adopted that nickname for me when we were kids; I didn't know what it meant so I used to give them the angriest look I could, and make sure they knew I didn't approve. Haha.


Diego had his scrambled egg with toast and of course his ketchup, while I had an egg white omelet with onions and mushrooms, and a whole grain piece of toast. Then we went back to playing...I had to make him his little playdoh balls in all sorts of colors (really he's obsessed), then we played with his hulk, superman, and spiderman. We did puzzles, read his books, I let him climb all over me as he normally does...ahhh, the simple life.


Then for lunch I made Risotto with onions, garlic, zucchini, cherry tomatoes and some left over roasted chicken I had in the fridge. Honestly, risotto tastes so much better when it's been in the fridge for a few hours. All the flavors kinda mix and settle in a whole lot nicer. For dinner tonight I'm making brined herbed chicken breasts baked in foil packets. German's stomach has been bothering him for the past few weeks, so I'm trying to make bland foods for dinner, and brined chicken breasts is exactly what he needs. I will say I'm proud of him though, for the past few months he has been eating brown rice with me. I'm slowly trying to get him to eat more vegetables...he's coming around =).

I've been contemplating not working Saturdays anymore. Yes, it's extra money and only 4 hours of work every other Saturday, but I feel like I never have a real weekend. I work every other Saturday, and I serve the alternating Sundays. That's 4 hours on a Saturday, and 3 hours on a Sunday. So no matter what, I never have a full 2 day weekend to be at leisure. I'm always doing something. Well, I have some thinking to do still. Hopefully work tomorrow will be nice and quick.
